STEWED OKRA & TOMATOES
For those of you that like Okra here’s one of my favorites, Lois
1/2 cup diced onions, 2 tbs. bacon drippings, 4 cups (1lb.) sliced okra, 2 1/2 cups peeled chopped tomatoes, 1 tsp. salt, 1/2 tsp. brown sugar, 1 clove garlic, 1/4 tsp. curry powder, 3 tbs. chopped green pepper.
Saute onions in bacon drippings ’til tender, add okra and cook 5 minutes stirring Okra occasionally. Add remaining ingredients, cover & simmer 15 minutes or until Okra is tender.
2 tsp. Brown Sugar, 1/2 chopped Green Pepper, 1 (6 oz) can Tomato Paste, 1 T Worcestershire Sauce, 1/2 tsp Salt, 1/3 tsp Vinegar, 1 clove Garlic, 1/2 c. chopped Onion, tsp. Pepper, 1/2 cup Ketchup, 1 tsp. dry Mustard, 3/4 cup Water, 1-1/2 lb any kind of meat (hamburger, pork, beef, chicken etc).
Combine all ingredients except meat. Simmer 30 minutes on low heat. May need to add more brown sugar for your taste. Add meat and simmer.
TACO SALAD

Brown 1 lb of hamburger, remove from heat.
Add 1 packet of taco seasoning, 1/2 cup of water and let this cool.
Layer: 1 head of lettuce (broken into piece’s), Diced Tomatoes, Hamburger, Mexican style Taco cheese, Crushed Doritos (ranch flavor).
Top with Ranch salad dressing.
WALNUT PINEAPPLE CAKE

2 cups sugar, 2 eggs, 2 cups flour, 2 teaspoons baking soda, 1 teaspoon vanilla
1 can crushed pineapple & juice (20oz.can), 1 cup chopped walnuts.
Cream sugar and eggs together and add the remaining ingredients.
Pour into a greased and dusted with flour, 9×13 cake pan or dish
Bake at 350 degrees. 30 to 35 mins.
Icing:
8 oz. cream cheese (softened)
1 stick butter (softened), 2 cups powered sugar (10X), 2 teaspoons vanilla
PEACHES ‘N CREAM PIE

Grease bottom & sides of 9-inch deep-dish pie pan. I use a glass pie dish and Pam. Set oven at 350 degrees.
Step 1:
3/4 cup flour, 1 t. baking powder, 1/2 t. salt, 3 oz. package vanilla Jello (cook & serve) pudding (not instant).
3 T. margarine softened, 1 egg, 1/2 cup milk
Combine in large mixer bowl, beat 2 minutes at medium speed, pour in pie pan
Step 2:
1 can sliced peaches, well drained (reserve juice). Place peaches over batter in pan.
Step 3:
8 oz. package cream cheese, softened, 1/2 cup sugar, 3 T. reserved juice.
Combine in small bowl, beat 2 minutes at med speed, spoon to within 1 inch of edge of batter.
Step 4:
1 T. sugar, 1/2 t. cinnamon
Combine, sprinkle over cream cheese filling.
Bake at 350 degrees for 30 to 35 minutes until crust is golden brown. Filling will appear soft.
LO-CAL ZUCCHINI MUFFINS

Mix Well: 1 egg, 1/2 cup sugar, 1/2 cup Splenda, 1 tsp vanilla
Add: 1 cup shredded zucchini, 1/2 cup drained crushed pineapple, 1/2 cup all purpose flour, 1 cup quick oatmeal, 1 tsp baking soda, 1/2 tsp salt, 1/4 tsp baking powder, 1-1/2 tsp cinnamon, 1/4 tsp nutmeg.
Optional: 1/4 cup chopped nuts and 1/4 cup raisins
Bake at 350 degrees for 22 minutes.
Makes 12 muffins (with the Optionals)
Total 154 calories each

Thanks Ann for this recipe. I can’t wait to try it. I love anything made with zucchinis. Especially zucchini nut bread so I know I’ll enjoy these muffins. They should be nice to stick in the freezer for a quick snack.
